... and just to add to this, there is more information about how to configure 
the wmsConfig.xml file here:

This describes how colour scale ranges can be defined at the level of a server, 
a dataset, a variable or even a standard_name (so you could define a default 
colour scale range for all sea_water_potential_temperature variables in all 
datasets).

The WMSExtensions link that Marcos provides spills the beans, but sometimes a 
quick example helps... note the use of COLORSCALERANGE:
