Try adding:

  GraphicsModeControl mode = display.getGraphicsModeControl();
  mode.setTextureEnable(false);

to your program. For efficiency, the default for terrain
displays is to use Java3D texture mapping and to smooth
the terrain. These lines disable texture mapping.
