Make 1/2 blue, the other half red and set the range for the reasonable range of values (N) for the parameter from -N to +N. For the contour interval, you can use GEMPAK syntax, so it could be something like: 2/-100/-2;2/2/100 to contour at 2 units from -100 to -2 and 2 to 100 (or whatever range you want). That should eliminate 0. If you want to dash the negative values, then set the base to be 0 and turn dashing on. This way, you only need one display.
